Meal Plan Monday

I like this little “segment” of E4F. I think that I will continue to do this every Monday, for two reasons. One, I know that I like to know what other people have planned for the week (I’m nosey like that), and two, because it keeps me on track and forces me to plan the week and grocery shop on Sunday. Although, if you don’t enjoy reading this definitely let me know and maybe I’ll take back the previous two sentences Smile.

This week I have two repeat meals from last week because I went to yoga with Allison one night, and I had leftovers another night. And Friday we are headed of to St. Lucia in the early morning (whoop whoop!!), so my meals may look a little boring.

Once I made up my (& Tony’s) meals for the week I headed off to Whole Foods.

Unfortunately I went to a smaller Whole Foods and they didn’t have everything I needed, so I had to go to our local store as well. I really am not a fan of going to 500 stores for grocery shopping. That’s actually why I almost never go to Trader Joes, as much as I LOVE it, I can’t get everything that I need there. I usually only stop in if I am driving by it.

Anyway, my fridge and fruit bowl are now nice and full!

My week will look something like this:

Monday:

  • Breakfast: Smoothie
  • Snack: KIND bar
  • Lunch: Egg salad sandwich (probably with the veggie + hummus snack)
  • Snack*: Veggie + hummus and fruit twist
  • Dinner: ELR risotto
  • Workout: Run

Tuesday:

  • Breakfast: Smoothie
  • Snack: KIND bar
  • Lunch: Risotto
  • Snack*: Veggies + hummus and fruit twist
  • Dinner: I know that it’s going to be a super late night at work (like 9pm), so I’ll probably end up picking up my favorite to-go salad
  • Workout: long walk?

Wednesday

  • Breakfast: Smoothie
  • Snack: KIND bar
  • Lunch: Egg salad or turkey sandwich
  • Snack*: Veggies + hummus and fruit twist
  • Dinner: Beef stir-fry
  • Workout: Run

Thursday:

  • Breakfast: Smoothie
  • Snack: KIND bar
  • Lunch: Stir-fry
  • Snack*: Veggies + hummus and fruit twist
  • Dinner: Whatever is left in the fridge!
  • Workout: Hot yoga (if I have time!)

Friday:

  • St. Lucia!!!

* I find that I am not really hungry between lunch and dinner, so I don’t usually end up eating my snack.

I know that I said this last week, but I don’t mind that my meals are pretty repetitive (except when I type them up on here and realize how boring I am). It really makes for a no-brainer morning of packing my lunch and snacks along with sipping my coffee and making a smoothie. During that time I also pack Tony’s lunch, which is also the same every day. Easy-peasy.

This week I will be running around like a crazy person trying to get things together for our trip. I know that Tony will be working super late all week to make sure he is caught up on work, so it will be up to me to pack his stuff. Tuesday I’m going to be working until 9 or 10p, so that day is pretty much out for me doing anything around the house. Luckily I have Thursday off of work, so I can use that day to wrap up anything that needs to be done/packed. It’s going to be a crazy week, but I’m so excited for our trip!
