What I ate Wednesday

I’m playing along with the Peas & Crayons WIAW posts this week. I think that doing these themed posts are kind of fun, but I get that they are not for everyone. So, if this isn’t for you, definitely check back a little later for another St. Lucia recap!

My morning started off running super late for my dermatologist appointment. So I quickly threw some fruit, a yogurt, spinach and some ice in a blender and headed out the door.

For a mid-day snack I had my usual suspects.

For lunch I made a Greek salad that had spring lettuce mix, shredded turkey breast, cucumber, green peppers, feta (yum!), tomato, katamala olives and balsamic dressing.

I had it for dinner Monday night as well, these ingredients are just my favorite!

I had a late afternoon snack since I knew I was going to eat a late dinner. I usually eat on my own because Tony works so late, but he was planning on coming home a little earlier than normal (9pm) so I decided to wait.

Mango that I completely butchered and a handful of mini pretzels. I actually got hungry again about an hour later and ate an un-pictured whole wheat tortilla with cheese and melted it in the microwave. Ghetto quesadillas are the bomb.

Dinner was one of my favorites, Greek Pasta! <—I need to re-do that recipe. My recipes from when I first started blogging are hard to follow, I know. This recipe is too good not to try, so I’ll fix it up for ya!
